Made by award winning winemaker Aaron Mercer this dynamic brand is organic, vegan, preservative free and features no additions. Winemaking: Harvesting in the cool of night, the fruit was cold soaked for two days prior to undergoing primary fermentation for another ten days prior to pressing. The wine underwent malolactic fermentation in clay amphora and some older puncheon. The shape of the clay amphora keeps the wine in constant movement and the porosity of clay between steel and oak allows gentle oxygen contact, building richness and texture, allowing the ample tannins of the wine to resolve while still showing generous fruit the length of the palate. The wine was held for an additional nine months prior to bottling. There was a small addition of sulphur prior to bottling. Tasting Note: This Shiraz has lifted and generous aromas of blackberry, violets, vanilla bean and all-kinds of spice. The palate is soft and mouth-filling with more dark berry fruits and peppery spices. The tannins are soft and beautifully integrated and due to the higher, cooler growing in Orange, the natural acidity in the wine ensures it finishes long and fresh. Cowpunk features wines which are vegan, preservative free, and source the best quality fruit, naturally. Winemaking: Sourced from an established single vineyard site located just south of the Margaret River township. Handpicked, whole bunch pressed, with only free run juice taken for this wine. Pressed straight to second-use oak where it was fermented on full solids. This wine spent three months on yeast lees with intermittent stirring and a further 3 months in a combination of larger oak and steel tank prior to blending. Vintage 2024: Margaret River had an early, fast-paced harvest with ideal conditions for high-quality Chardonnay. A warm, dry growing season led to lower yields but produced exceptionally concentrated fruit with bright natural acidity. Chardonnay was picked early to preserve freshness and purity, resulting in wines that are vibrant, textural, and finely balanced—a standout year for this flagship white variety. Montepulciano fruit was picked and de-stemmed, fermented with wild yeast and left on skins for 10 days prior to pressing. Bottled early with no additions or preservatives. Vintage 2023: The wider region was looking at being three to four weeks behind at vintage time due to cooler weather, but sunny periods throughout February and March that were much drier than December and January resulted in very good quality grapes for both red and white across the board. Tasting Note: This is a vibrant and fruit driven style full of energy and refreshment. There is a great juxtaposition between fresh and bruised apples, hints of yeasty complexity and a dry finish that is full of vivacity. Winemaking: Hand Picked Pinot Noir grapes from the cool climate region of Tumbarrumba. The fruit was fermented with 10% whole bunches on the bottom of the remaining crushed fruit to achieve aromatic lift and perfume. The fermentation was temperature controlled over a 10 day period with gently punch downs and pump overs twice daily to manage extraction of colour and tannins. Vintage 2022: The second of the consecutive La Nina seasons brought difficult conditions with isolated hail storms and late frosts. The season continued in providing a mild spring and summer. Fermented at low temperatures to maintain delicate aromatics, stored on lees for 3 months after ferment to build some fine texture and complexity in to the base wine. Vintage 2022: The 2022 vintage was the second of the La Nina vintages, Yields were up and vigour was high, a great season for fruit and canopy balance. The shaded canopies played a part in maintaining high natural acids, along with the mild summer and longer ripening period. An excellent season for allowing prosecco to get full fruit ripeness of flavour whilst also maintaining perfect chemistry for sparkling base. Consigned to stainless steel after fermentation this wine was bottled shortly after with little additions and was neither fined nor filtered. Vintage 2022: An outstanding year for the Vale, both from a balanced yield level and wine quality. The climatic conditions were cool to warm with no real heat wave impacts. The season was delayed with a cool, dry summer but was rescued with a long Indian style summer well into Autumn. This resulted in slow ripening and optimum flavour development. Sugar, tannin, and flavours all tracked together in development resulting in high quality wines being produced.
