Ignoring fashion and braving the scorn “wine thought police” Elephant in the Room was created to give consumers exactly what they want – full bodied and mouth-filling wines that deliver maximum pleasure. Each wine is sourced from slow-ripening cool climate vineyards in the Limestone Coast of South Australia and partially matured in French Oak before final blending and bottling by Corey Ryan. Vineyards: Sourced mainly from low yielding vineyards near Mount Gambier in the east of the limestone coast wine region. The higher altitude aspect and cool evening temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested whilst the long, slow ripening ensures excellent flavour development. Winemaking: Partially hand before de-stemming and fermentation in a combination of two tonne open fermenters with ten percent whole bunch and twice daily hand plunging and larger closed fermenters with pump overs. Summary: Organically grown, no additives, vegan and moderate in alcohol 'Fuzzy Bare' is the new kid on the block- fizzy, fun and ready to drink! Despite being the newest hottest kid on the block, piquette dates to ancient Greek and Roman times. It enjoyed a renaissance in the 19th century when phylloxera decimated French vineyards, making grapes so scarce every ounce of the precious fruit was used. Made from adding water to bare pressed grape skins and left to ferment, this low-alcohol, refreshing, and slightly fizzy drink Was named ‘piquette’ (prickle) and became the standard for vineyard workers at the lunch table. Winemaking: Made using the left over skins that have been pressed off from Slinky Bare and CowPunk wines. Water is added to the press where it is left for 12 hours to interact with the skins. The solution is then pressed to tank and the residual sugar fermented out to dryness Tasting Note: Cherry cola aromatics, Cranberry and Mulberry fruit jump out of the glass. The palate is vibrant with rich raspberries and blackcurrants. There is a slight phenolic chalkiness that provides structure and a tight acidity carries the fruit for a long, crisp finish. Thick gnarled old vines produce tiny berries of incredible intensity that is harnessed by careful winemaking and partial maturation in large seasoned oak barrels to deliver wonderfully approachable, opulent and mouth-coating flavours. Winemaking: Staggered hand-picking sections of the vineyard ensuring the fruit is at optimal ripeness. Harvested early in the morning to ensure freshness is retained before partial destemming and fermentation in open tub fermenters. Regular plunging to extract colour, tannin and flavour before being transferred to second-use French oak hogsheads for further maturation and integration. Bottled with minimal fuss and minimal handling. Vintage 2024: A brilliant vintage for Mullet wines. An early cold period leading to a mild temperature growing season ensured full and even ripeness was achieved across red and white varieties alike. Yields were down, but flavours were bold. These big riper flavours arrived in the berry later in the season allowing for picking at higher Baume resulting in above average ABV. Tasting Note: Ripe blood plum, blackberry and brown spice fill the space instantly upon opening. This is a super-fragrant wine with incredible fruit power for a Pinot Noir. More about Take It To The Grave Find a stockist Region: Limestone Coast Summary: Take it to the Grave is a joint venture between Nicholas Crampton and South Australian wine grower Jim Zerella created to deliver interesting and rewarding wines whilst challenging a few established rules and preconceptions. The Take it to the Grave Pinot Noir takes on one of the wine world’s most entrenched rules – that it is impossible to make high quality, varietally expressive but affordable Pinot Noir. Winemaking: Sourced from a number of vineyards within the Adelaide Hills across a number of micro climates – providing a good blend of expressive fruit, structure and high note aromatics. Primarily machine picked before vinification in a combination of small and large open fermenters. The majority of the blend is matured in stainless steel with a component aged in new and one year old French oak. Vintage 2021: The first of the consecutive La Nina seasons brought much welcomed rain over the winter and spring months, filling up dehydrated soil profiles after consecutive years of drought. The season continued in providing a mild spring and summer. Sophisticated natural wines, made simple for the modern day consumer. Naturally crafted from small parcels of cool climate fruit by Frances Kentwell and Nicole Braiser. Fran.k supports WomenandRevolution, an association of wine professionals aiming to achieve gender balance in all areas of the wine industry. Winemaking: Hand Picked Pinot Noir grapes from the cool climate region of Tumbarrumba. The fruit was fermented with 10% whole bunches on the bottom of the remaining crushed fruit to achieve aromatic lift and perfume. The fermentation was temperature controlled over a 10 day period with gently punch downs and pump overs twice daily to manage extraction of colour and tannins. Vineyards: From dry grown organic vineyards in the Gard region situated on the Rhone river and part of Languedoc Rousillon. The vines sit on a mix of clay and limestone soils. During summer it remains warm and sunny yet cool at night due to the proximity of the river and the sea. Vintage 2019: Drought has been a problem for the region in recent years and 2019 was not spared from more challenging drought conditions. A cold, dry Spring meant the vines were not in optimum flowering conditions then an intense Summer heat hampered further development. Thankfully it cooled prior to harvest. Although a later harvest, the fruit finally ripened and the results were more concentrated with defined tannin structure. Tasting Note: Light red in colour with a ripe nose of strawberries and a hint of spice. A smooth mouthfeel with good length and clean acidity so typical of the variety. Each wine is sourced from premium slow-ripening cool climate vineyards across South Australia by Corey Ryan. Vineyards: Sourced from established vineyards in the Adelaide Hills. The sheltered aspect and consistent temperatures combine to ansure the retention of natural acidity in the elegant fruit harvested. Winemaking: Picked partially by hand. Partially hand before de-stemming and fermentation in a combination of two tonne open fermenters with ten percent whole bunch and twice daily hand plunging and larger closed fermenters with pump overs. All components blended post fermentation before the final wine was in small french French oak barrels for 6 months months before bottling with minimal fining, filtration and sulphur addition. Vintage 2022: A wet vintage across most of Australia in 2022 but the Adelaide Hills faired very well. The climatic conditions were cool to warm with no real heat wave impacts. The season was delayed with a cool, dry summer but was rescued with a long Indian style summer well into Autumn. This resulted in slow ripening and optimum flavour development. Tasting Note: This Super Duper Pinot Noir is a perfect example of what a wine drinker wants and not what the wine police tell us it should be. Aged in small oak barrels, it’s generous and opulent with an unfashionable amount of flavour. Brimming with red berries and savoury nuances with a hint of spicy oak. Like the might of the little wombat, Little Giant is crafted from premium regional South Australian fruit from established vineyards that deliver character and interest well above their size and weight. Hand-crafted and made with minimal additions and preservatives, these are wines made of the vineyard. The grapes are picked at optimal ripeness, minimally handled in the winery and fruit vibrancy is not hidden by non-essential artifact. Seeking first and foremost fruit expression, drinkability and to be a great accompaniment to food. Don’t let the size fool you, these are wines you’ll want to drink. Winemaking: From premium vineyards in South Australia, grapes were hand picked then fermented with a small portion of whole bunch (about 5%) for complexity. The wine was then added to 600ltr barrels for maturation, a portion of which had seen 30% new oak the rest was consigned to old oak. 2025 Vintage: The 2025 vintage in South Australia was defined by an early, fast-paced harvest due to spring frosts, drought, and intense summer heat. Yields were down, but fruit quality was excellent, with concentrated flavours and natural acidity. Red wines show richness and depth, while whites maintain freshness and balance. Vintage 2020: 2020 had its challenges with a dry start and only a small portion of rain and with much of the country suffering drought conditions. The warm dry spell continued in December with some extreme hot temperature days recorded. Thankfully due to one of the coolest January’s on record the vines were able to re-address the balance. It was a late ripening year and yields were down but despite the challenges it will be another excellent vintage across South Australia. Tasting Note: Medium red in colour with vibrant aromas of dark plums,cherry and hints of forest floor. The palate is fruit-driven with a core of supple red berry and cherry flavours highlighted by a spicy complexity. Bright acidity and fine tannins provide definition to the long finish. Winemaking: A less is more regime in the vineyard and the winery has resulted in a fresher more uncompromising wine stylistically. Vintage 2023: A cooler and wetter spring slowed the start of vintage in 2023. Coolness was a signature of the year putting some pressure on many vineyards and yields. The individual site for Wild Folk wines here in the Yarra valley needed to take precautions and act decisively during the growing period to ensure disease pressure was well-managed and berries could achieve full flavour and phenolic ripeness. Drawing on deep industry ties, they source small parcels from standout subregions to craft contemporary wines with authenticity and character wines that capture the real New Zealand, both in the glass and in the heart. Winemaking: Fruit from a single Lowburn vineyard was hand-harvested, destemmed with 20% whole bunches, and cold-soaked before natural fermentation. The must was hand-plunged twice daily for 15 days, followed by a five-day post-ferment soak for enhanced color and structure. The wine matured for 12 months in French oak barriques (25% new) and was bottled unfiltered to maintain its character. Vintage 2024: The 2024 growing season in Lowburn combined dry warmth, early fruit set, and a long ripening period to produce expressive Pinot Noir. Strong flowering and average-to-above yields thrived under dry El Niño conditions, followed by a mostly rain-free summer with timely rainfall easing vine stress. Cool autumn nights slowed ripening, enhancing flavour concentration, acidity, and elegance. The resulting Pinot Noir features ripe cherry and bramble fruit, fine tannins, and a distinctive mineral texture. A little patch of sunshine reflecting the modern, warm, casual drinks and dining occasions. A hand-crafted range of wines from varieties best suited to display vibrant fruit flavours whilst being proudly lighter in alcohol. These are perfect for a glass on their own or will partner with many richer and lighter cuisines.
Winemaking: Harvested in the cool of the morning to avoid the warmer temperatures of the day. The fruit is quickly delivered to the winery for destemming and crushing prior to a regular fermentation in stainless steel tank. A small component of the blend is cool distilled whilst another undergoes gentle cool temperature / high pressure filtration process. The two parcels are then skilfully blended back to the original base wine to deliver freshness and vibrancy at only half the ABV of traditional wines.
Vintage 2023: The winter and spring prior to the 2023 vintage was generally a little wetter and cooler than what is usual, delaying the start of vintage and meaning some extra care was required through the growing period. Whilst the vintage was indeed later than usual, there were some really beautiful parcels of fruit that benefited from being grown in sites where the slower ripening simply enabled flavour ripeness to be achieved with character & balance.
Tasting Note: A light, vibrant crimson in the glass, the palate is lively with a core of supple red berry flavours accompanied by subtle spice notes. Soft and light mouthfeel, nice acidity, fine tannins and a moderate wine to enjoy with many dishes and occasions.
