It enjoyed a renaissance in the 19th century when phylloxera decimated French vineyards, making grapes so scarce every ounce of the precious fruit was used. Made from adding water to bare pressed grape skins and left to ferment, this low-alcohol, refreshing, and slightly fizzy drink Was named ‘piquette’ (prickle) and became the standard for vineyard workers at the lunch table. Winemaking: Made using the left over skins that have been pressed off from Slinky Bare and CowPunk wines. Water is added to the press where it is left for 12 hours to interact with the skins. Older, low yielding vines that are farmed organically and painstakingly hand-harvested, here are an expression of love for an ancient way of life in an ancient land. Winemaking: Hand harvested in the cool of the morning, fermented in open top fermenters with plunging by hand and additional time on skins to ensure colour and flavour extraction. Fermented slowly and then transferred into a combination of larger format oak and stainless steel for maturation. The wine was then blended and bottled with minimal fining and filtration. Tasting Note: Brooding and earthy on the nose this is characteristic Nero d’Avola with lifted aromatics and plush fruit intensity. Winemaking: The grapes are softly pressed, then left in contact with the skins for 12 hours at 10C for extraction of the aromas. Fermentation takes place at 14-16C, after that the wine is left on its lees at a constant temperature. Prior to bottling the wine goes through a very gentle filtration. Vintage 2021: The 2021 vintage although low in crops the quality level is the highest growers have seen in a long time! There is great excitement building around the 2021 vintage. Low level of crops due to some small hail event early in the season, the rest of the season was dry with no disease pressure resulting in beautifully ripe and clean wines. Vineyards: From dry grown organic vineyards in the Gard region situated on the Rhone river and part of Languedoc Rousillon. The vines sit on a mix of clay and limestone soils. During summer it remains warm and sunny yet cool at night due to the proximity of the river and the sea. Vintage 2019: Drought has been a problem for the region in recent years and 2019 was not spared from more challenging drought conditions. A cold, dry Spring meant the vines were not in optimum flowering conditions then an intense Summer heat hampered further development. Thankfully it cooled prior to harvest. Although a later harvest, the fruit finally ripened and the results were more concentrated with defined tannin structure. Winemaking: Sourced primarily from a mature, dry-grown vineyards in South Australia. The fruit is hand-harvested and sorted before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French oak (30% new French) for ten months before bottling with minimal filtration and sulphur addition. 2022 Vintage: A wet spring provided adequate soil moisture going in to the growing season. Windy and rainy conditions during spring resulted in lower than usual crops. The summer months were mild facilitating a long ripening period and exceptional flavour and acid balance in white wines. Tasting Note: A bright, lifted nose of plush red fruits, chocolate and subtle spices. Summary: Castilla La Mancha: The vast, high and dry plains of Castilla la Mancha comprise over 50% of Spain’s vineyards. Vineyards planted on the slopes of mountain ranges in the north and north east add a degree of elegance to the wines. Winemaking: Totally de-stemmed with a short cold soak before a long, cool fermentation with daily pump - overs to achieve optimum fruit and colour. The core of the blend was aged in stainless steel before six months maturation in seasoned French and American oak.
